U restoranu Villa Nico stvaram jela koja poštuju dalmatinsku tradiciju, ali joj dajem svoj osobni pečat – lagano, svježe, s karakterom. Vjerujem u sezonske namirnice, lokalne proizvođače i jednostavnost. Ne vjerujem u previše ukrasa na tanjuru – ako je sastojak dobar, on govori sam za sebe. Volim kada gosti osjete more u ribi, sunce u rajčici i ruke onoga tko je to sve pripremio. To je za mene prava kuhinja.
